The rocky, limestone-rich soils add structure and minerality to the wines, while the arid conditions result in low yields, concentrating the flavors and complexity of the grapes.

Led by the visionary winemaker Yiannis Economou, the estate follows a philosophy of minimal intervention, emphasizing organic farming and natural winemaking. Yiannis believes in allowing the land and indigenous grapes to speak for themselves, avoiding commercial yeasts, additives, or excessive oak influence.
